ScienceNordic has interviewed Sven-Erik Jacobsen from the University of Copenhagen, coordinator of PROTEIN2FOOD, on the crop varieties he is experimenting with in Taastrup, Denmark.
PROTEIN2FOOD is researching the properties of ancient crops – buckwheat, amaranth, and quinoa – high in protein content and quality, to replace protein from animal sources with alternative sources of protein.
